Spicy Barramundi Braise

  • 100g barramundi
  • 2 zucchini cut lengthways into fine strips
  • 2 tbs Spiral arrabiata tomato sauce
  • 1/2 massel chicken stock cube
  • 1 tbs finely chopped red onion


Lay sliced zucchini into oven proof dish, dissolve stock cube in 1 tbs boiling water, add tomato sauce and onion.

Spoon over zucchini ribbons, covering them well.

Put foil over and bake in 180 oven for about an hour – check and turn them over a couple of times so flavor in absorbed into zucchini.

Cook barra (I just season with a little salt and pepper) in microwave and serve with tomatoey ribbons.
